Crispy Outside Soft Inside Shrimp Fritters
Ingredients
- 1 carrot, sliced
- 1 potato, sliced lengthwise
- Sliced spring onion
- Optional sliced bird's eye chili
- 1 onion, sliced
- Chopped shrimp or anchovies
- 2 cups wheat flour
- 3 tablespoons rice flour
- Salt to taste
- 3 ice cubes
- 1 glass iced water
Preparation
Put all vegetables, onion, and shrimp or anchovies in one container.
Add wheat flour, rice flour, salt to taste, ice cubes, and iced water.
Mix all ingredients together, then gradually add more water while stirring with a spoon.
Let the mixture rest so the ice melts, then stir again until the batter is soft and scoopable.
Heat oil in a pan and fry the batter until golden and crispy.
Tips
Ensure the oil is very hot for maximum crispiness.
