Salmon Tacos with Avocado Lime Crema
Ingredients
- 1/2 very ripe mashed avocado
- zest and juice from one lime
- 1/4 cup almond milk plain yogurt
- drizzle of honey
- sriracha or hot sauce of choice
- wild caught or sustainably farmed salmon
- Chili Lime seasoning
- cayenne pepper
- cumin
- garlic powder
- coconut oil
- Cassava Coconut Tortillas
- chopped cilantro
- cucumber
- red cabbage
Preparation
Combine 1/2 very ripe mashed avocado, zest and juice from one lime, 1/4 cup almond milk plain yogurt, a drizzle of honey, and sriracha or hot sauce of choice. Set aside.
Season salmon with Chili Lime seasoning, cayenne pepper, cumin, and garlic powder. Cook in coconut oil in a cast iron skillet for 3-4 minutes per side.
Heat Cassava Coconut Tortillas in a skillet over medium heat for 15-20 seconds per side.
Fill tortillas with chopped cilantro, cucumber, red cabbage, flaked salmon, Avocado Lime Crema, a drizzle of sriracha, and fresh lime zest.
