Thai Style Seasoned Rice

Ingredients

  • 1 bowl cooked Jasmine rice
  • 1 lap cheong sausage
  • 1.5 tablespoons shrimp paste
  • 2 tablespoons dried shrimp
  • 2 bird's eye chilies
  • 3 Thai shallots or 1/4 red onion
  • Juice of 1 lime

Preparation

  1. Rehydrate the dried shrimp in hot water.

  2. Slice the lap cheong sausage diagonally.

  3. Chop the bird's eye chilies.

  4. Slice the Thai shallots or red onion.

  5. Lightly pan fry the sausage until cooked.

  6. Mix all ingredients together in a bowl.

  7. Serve with fresh vegetables like cucumber, long chili, and cabbage, or omit if desired.
