Thai Shrimp Paste Rice
Ingredients
- 1 cup freshly cooked jasmine rice
- 1 Chinese sausage, sliced
- 2 eggs
- 3 tablespoons snake beans or green beans
- 2 cabbage leaves
- 2 bird's eye chilies
- 1/4 cucumber
- 3 shallots or 3 tablespoons red onion
- 1 lime wedge
- 2 garlic cloves
- 1 teaspoon shrimp paste
Preparation
Make an omelet with the eggs and cut into ribbons.
Chop the snake beans, cabbage leaves, bird's eye chilies, cucumber, and shallots into desired pieces.
In a pan, heat a small amount of oil over low-medium heat, add Chinese sausage and cook for 1 minute then set aside.
Add garlic and sauté until it starts to brown.
Add shrimp paste and sauté for 30 seconds until fragrant.
Add rice and mix everything through until shrimp paste is well incorporated.
Serve with the prepared omelet, vegetables, and lime wedge, then season with a squeeze of lime juice.
