Spicy Stir-Fried Chicken Liver and Tofu
Ingredients
- 5 pairs chicken liver and gizzard
- 1/2 block Chinese tofu, cut into cubes
- Oil for frying and sautéing
- Salt, sugar, mushroom stock to taste
- 1 stalk green onion, roughly chopped
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
Sliced spices
- 1 large onion
- 3 cloves garlic
- 4 shallots
- 4 curly red chilies
- 5 red bird's eye chilies
Preparation
Wash the chicken liver and gizzard clean, boil water with bay leaves, lime leaves, ginger, galangal, lemongrass, and salt until cooked. Remove, cool, and cut to desired size
Fry the tofu until crispy and set aside
Heat a little oil and sauté the sliced spices until fragrant, then add the chicken liver and gizzard and tofu. Season with the remaining ingredients, add a little water, and cook until the spices are absorbed. Adjust the taste, then remove and serve
