Spicy Indonesian Beef Lung Stir-Fry
Ingredients
- 450 grams boiled beef lung, sliced thin
- Salt to taste
- Powdered stock to taste
- Lime juice to taste
Spice paste
- 10 curly red chilies
- 100 grams red bird's eye chilies
- 2 medium red tomatoes
- 17 shallots
- 12 cloves garlic
Aromatic herbs
- 7 cm ginger, smashed
- 3 stalks lemongrass, smashed
- 10 kaffir lime leaves
Preparation
Fry the beef lung until dry and crispy, then drain and set aside.
Sauté the spice paste and aromatic herbs until fragrant and fully cooked. Add powdered stock and salt, stir well, then add the fried beef lung. Stir until the spices are well incorporated and absorbed.
Add lime juice to taste, stir well, adjust seasoning, and serve.
