Spicy Stir-Fried Beef Lung

Ingredients

Boiling

  • 250g beef lung
  • 3 cloves garlic, crushed
  • 2 inches ginger, crushed
  • 2 bay leaves
  • 2 tsp salt
  • Water, as needed

Spices

  • 5 shallots, sliced
  • 3 cloves garlic, sliced
  • 15 red bird's eye chilies, sliced
  • 20 green bird's eye chilies, whole
  • 2 inches galangal, crushed
  • 3 bay leaves
  • 1 tsp salt
  • 1 tsp oyster sauce
  • 1 tbsp sweet soy sauce

Preparation

  1. Wash the lung thoroughly, boil it with the boiling ingredients until cooked, drain, cut into desired pieces, fry, and set aside.

  2. Sauté the shallots and garlic until fragrant, add the chilies, galangal, and bay leaves, sauté until fragrant, then add the fried lung.

  3. Add salt, oyster sauce, and sweet soy sauce, stir, cook briefly, taste and adjust seasoning, then turn off the heat.

  4. Serve.
