Spicy Indonesian Clam Stir-Fry

Ingredients

  • 300g fresh clams
  • 1 lime
  • Salt to taste
  • 2 tablespoons oyster sauce
  • Water as needed
  • 10 green curly chilies
  • 20 red bird's eye chilies
  • 1/2 onion
  • 3 shallots
  • 3 garlic cloves
  • 1 tomato
  • 1 lemongrass stalk
  • 1 piece ginger
  • 1 tablespoon lime juice
  • 2 green onions

Preparation

  1. Slice all the ingredients as prepared.

  2. Wash the clams thoroughly with running water, squeeze lime over them, and boil until it boils. Discard the water and drain.

  3. Sauté the shallots, garlic, and onion until fragrant.

  4. Add the green chilies, red bird's eye chilies, ginger, and lemongrass.

  5. Add a glass of water.

  6. Add the clams and stir well.

  7. Add salt and oyster sauce, then check the taste.

  8. Finally, add the green onions and tomato.

  9. Cook until the clams are done and the flavors are absorbed.
