Vegan Nourish Bowl with Baked Bbq Tofu

Ingredients

  • tofu
  • store-bought BBQ sauce
  • bulgur wheat
  • avocado
  • broccoli
  • tomatoes
  • carrot
  • vegan mayonnaise
  • cucumber
  • green lettuce

Preparation

  1. Cut tofu into 1-inch cubes.

  2. Toss tofu cubes with BBQ sauce until evenly coated.

  3. Bake tofu at 400°F (200°C) for 20-25 minutes, until crispy and golden.

  4. Cook bulgur wheat according to package instructions and let cool.

  5. Chop broccoli, avocado, cucumber, and tomatoes into bite-sized pieces.

  6. Grate the carrot and mix with vegan mayonnaise.

  7. Place a bed of lettuce in the bottom of a serving bowl.

  8. Arrange the cooked bulgur wheat, baked tofu, and prepared vegetables on top of the lettuce.

  9. Serve immediately.
