Vegan Nourish Bowl with Baked Bbq Tofu
Ingredients
- tofu
- store-bought BBQ sauce
- bulgur wheat
- avocado
- broccoli
- tomatoes
- carrot
- vegan mayonnaise
- cucumber
- green lettuce
Preparation
Cut tofu into 1-inch cubes.
Toss tofu cubes with BBQ sauce until evenly coated.
Bake tofu at 400°F (200°C) for 20-25 minutes, until crispy and golden.
Cook bulgur wheat according to package instructions and let cool.
Chop broccoli, avocado, cucumber, and tomatoes into bite-sized pieces.
Grate the carrot and mix with vegan mayonnaise.
Place a bed of lettuce in the bottom of a serving bowl.
Arrange the cooked bulgur wheat, baked tofu, and prepared vegetables on top of the lettuce.
Serve immediately.
