Pumpkin Oats Breakfast with Fruit Toppings
Ingredients
- 1/2 cup oats
- 1/3 cup pumpkin
- 1/2 mashed ripe banana
- 1 tsp molasses
- 1 tsp pumpkin pie spice
- 1/4 tsp ginger powder
- 1 tbsp flax meal
- 1 1/4 cup almond milk
Toppings
- banana
- pomegranate
- persimmon
- nibs
- pecans
Preparation
Mix together 1/2 cup oats, 1/3 cup pumpkin, 1/2 mashed ripe banana, 1 tsp molasses, 1 tsp pumpkin pie spice, 1/4 tsp ginger powder, 1 tbsp flax meal, and 1 1/4 cup almond milk.
Cook over medium heat until you achieve the desired consistency.
Top with banana, pomegranate, persimmon, nibs, and pecans or your favorites.
