Pumpkin Oats Breakfast with Fruit Toppings

Ingredients

  • 1/2 cup oats
  • 1/3 cup pumpkin
  • 1/2 mashed ripe banana
  • 1 tsp molasses
  • 1 tsp pumpkin pie spice
  • 1/4 tsp ginger powder
  • 1 tbsp flax meal
  • 1 1/4 cup almond milk

Toppings

  • banana
  • pomegranate
  • persimmon
  • nibs
  • pecans

Preparation

  1. Mix together 1/2 cup oats, 1/3 cup pumpkin, 1/2 mashed ripe banana, 1 tsp molasses, 1 tsp pumpkin pie spice, 1/4 tsp ginger powder, 1 tbsp flax meal, and 1 1/4 cup almond milk.

  2. Cook over medium heat until you achieve the desired consistency.

  3. Top with banana, pomegranate, persimmon, nibs, and pecans or your favorites.
