Warm Pumpkin Oats Breakfast with Toppings

Ingredients

  • 1/2 cup rolled oats (I used @rightfoods chia crunch oatmeal packet)
  • 1/3 cup pumpkin purée
  • 1 tbsp flax meal
  • 1 tsp maca powder (optional)
  • 1/4 tsp ginger
  • 1 tsp pumpkin pie spice
  • 1 tsp maple syrup or molasses
  • 1/2 of a banana (mashed)
  • 1 1/4 cup unsweetened almond milk
  • a pinch of salt

Toppings

  • extra banana
  • blueberries
  • peanut butter
  • granola
  • persimmon

Preparation

  1. Cook all ingredients together in a saucepan over medium heat until it thickens.

  2. Serve topped with extra banana, blueberries, peanut butter, granola, and persimmon.
