Gluten Free Strawberry Jam Muffins
Ingredients
- 2 eggs
- 1/2 cups almond flour
- 2 tbsp coconut flour
- 1/4 cup maple syrup
- 1/2 tsp baking powder
- 1/2 tsp vanilla
- 1 tbsp melted butter
- Jam
- 1 cup chopped strawberries
- 1 tsp maple syrup
- 1 tsp lemon juice
- 1 tsp chia seeds
Preparation
In a bowl, whisk the eggs
Then add in the rest of the muffin ingredients
Mix together well
Line 6 muffin cups
Pour batter 3/4 of the way in
Bake at 350F for 20 minutes
Jam
Heat a saucepan over medium heat
Add 1 cup chopped strawberries, chia seeds, lemon juice, and maple syrup
Let simmer for 10 minutes
Let muffins cool completely
Cut a small hole in the muffins, fill with jam
