Gluten Free Strawberry Jam Muffins

Ingredients

  • 2 eggs
  • 1/2 cups almond flour
  • 2 tbsp coconut flour
  • 1/4 cup maple syrup
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla
  • 1 tbsp melted butter
  • Jam
  • 1 cup chopped strawberries
  • 1 tsp maple syrup
  • 1 tsp lemon juice
  • 1 tsp chia seeds

Preparation

  1. In a bowl, whisk the eggs

  2. Then add in the rest of the muffin ingredients

  3. Mix together well

  4. Line 6 muffin cups

  5. Pour batter 3/4 of the way in

  6. Bake at 350F for 20 minutes

  7. Jam

  8. Heat a saucepan over medium heat

  9. Add 1 cup chopped strawberries, chia seeds, lemon juice, and maple syrup

  10. Let simmer for 10 minutes

  11. Let muffins cool completely

  12. Cut a small hole in the muffins, fill with jam
