Quick Vegan Muffin Tin Pizza Bites
Ingredients
- 2 tortilla wraps
- 4 tbsp tomato purée
- 100g grated vegan cheese
- 2 tbsp sweetcorn
- 1/4 chopped red pepper
- 4 small chopped tomatoes
- pinch of dried oregano
- drizzle of olive oil
Preparation
Pre-heat the oven to 180°C or gas mark 4.
Slice 2 tortilla wraps into quarters and stuff each quarter into a muffin tin space.
In a mixing bowl, stir together 4 tbsp tomato purée, 100g grated vegan cheese, 2 tbsp sweetcorn, 1/4 chopped red pepper, 4 small chopped tomatoes, a pinch of dried oregano, and a drizzle of olive oil.
Spoon the mixture into the tortillas and bake for 10-12 minutes until the edges are golden and the cheese has melted.
Season with a little black pepper, place a basil leaf on each, and serve hot or cold.
