Quick Vegan Muffin Tin Pizza Bites

Ingredients

  • 2 tortilla wraps
  • 4 tbsp tomato purée
  • 100g grated vegan cheese
  • 2 tbsp sweetcorn
  • 1/4 chopped red pepper
  • 4 small chopped tomatoes
  • pinch of dried oregano
  • drizzle of olive oil

Preparation

  1. Pre-heat the oven to 180°C or gas mark 4.

  2. Slice 2 tortilla wraps into quarters and stuff each quarter into a muffin tin space.

  3. In a mixing bowl, stir together 4 tbsp tomato purée, 100g grated vegan cheese, 2 tbsp sweetcorn, 1/4 chopped red pepper, 4 small chopped tomatoes, a pinch of dried oregano, and a drizzle of olive oil.

  4. Spoon the mixture into the tortillas and bake for 10-12 minutes until the edges are golden and the cheese has melted.

  5. Season with a little black pepper, place a basil leaf on each, and serve hot or cold.
