Berry Paleo Chia Pancakes

Ingredients

  • 2/3 cup birchbenders paleo pancake mix
  • 3/4 cup filtered water
  • 1/2 tbsp chia seeds
  • Small handful fresh blueberries

Blackberry chia jam

  • Blackberries
  • Chia seeds
  • 1-2 tbsp water

Preparation

  1. Mix all the ingredients together to form batter

  2. Spoon batter into skillet and flip each side once until lightly browned

  3. Top with unsalted almond butter and blackberry chia jam

  4. To make blackberry chia jam, heat smashed blackberries with chia seeds and 1-2 tbsp water in a saucepan on low for 4-5 minutes
