Chocolate Orange Zucchini Oatmeal Breakfast
Ingredients
- 1/2 cup oats
- 1 cup grated zucchini
- 3/4 cup water
- 1/4 cup nut milk or coconut milk
- 2 Tbsp chia seeds
- 2 tsp maple syrup
- 2 Tbsp cacao powder
- 1/2 tsp vanilla extract
- 2 tsp cinnamon
- pinch of nutmeg
- pinch of sea salt (optional)
- 2 tsp maca powder (optional)
- zest of one orange
Preparation
In a saucepan, combine the oats, zucchini, water, milk, and chia seeds.
Cook on medium heat for about 5 minutes, stirring constantly.
Add a bit more water if needed.
Then add the remaining ingredients, stirring to combine.
Divide into two containers and refrigerate or serve warm.
Top with cacao nibs, fresh fruits, or a tablespoon of nut butter.
Note: You can blend the zucchini with other ingredients if you prefer not to chop it.
