Chocolate Orange Zucchini Oatmeal Breakfast

Ingredients

  • 1/2 cup oats
  • 1 cup grated zucchini
  • 3/4 cup water
  • 1/4 cup nut milk or coconut milk
  • 2 Tbsp chia seeds
  • 2 tsp maple syrup
  • 2 Tbsp cacao powder
  • 1/2 tsp vanilla extract
  • 2 tsp cinnamon
  • pinch of nutmeg
  • pinch of sea salt (optional)
  • 2 tsp maca powder (optional)
  • zest of one orange

Preparation

  1. In a saucepan, combine the oats, zucchini, water, milk, and chia seeds.

  2. Cook on medium heat for about 5 minutes, stirring constantly.

  3. Add a bit more water if needed.

  4. Then add the remaining ingredients, stirring to combine.

  5. Divide into two containers and refrigerate or serve warm.

  6. Top with cacao nibs, fresh fruits, or a tablespoon of nut butter.

  7. Note: You can blend the zucchini with other ingredients if you prefer not to chop it.
