Creamy Garlic and Thyme Mushroom Toast

Ingredients

  • 250g chopped chestnut mushrooms
  • 1/2 chopped onion
  • 4 chopped garlic cloves
  • A few chopped thyme sprigs
  • 1 tablespoon natural yogurt
  • Olive oil
  • Juice of half a lemon

To serve

  • 2 slices of toast

Preparation

  1. Chop the garlic and onion, place them in a pan with a good drizzle of olive oil, and cook for 5-10 minutes over medium heat until soft.

  2. Once the onions and garlic are cooked, add the mushrooms, stir well, and cook for another 5-10 minutes until soft.

  3. Just before serving, add a good pinch of thyme, salt and pepper, and stir in the yogurt and lemon juice, and put the bread in the toaster to toast.

  4. When ready, spoon the mushroom mixture onto the toast and serve with an additional sprinkle of thyme.
