Healthy Tabbouleh Salad

Ingredients

  • 3 bunches fresh parsley
  • 2 Roma tomatoes
  • Pinch of salt
  • 2 tbsp lemon juice
  • 1/2 cup bulgur
  • 1 cup water
  • 1 cucumber
  • 2 green onions
  • 2 tbsp mint
  • 1/2 cup olive oil
  • 1/2 cup lemon juice
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

  1. Soak the bulgur in water for 20-30 minutes until soft

  2. Finely chop the parsley

  3. Dice the tomatoes and cucumber

  4. Slice the green onions

  5. Chop the mint

  6. In a large bowl, combine the bulgur, parsley, tomatoes, cucumber, green onions, mint, lemon juice, olive oil, salt, and pepper

  7. Mix well and let the salad rest for at least 30 minutes to allow flavors to blend
