Mango Chia Seed Breakfast
Ingredients
- 3 tbsp chia seeds
- 1 cup soy milk
- 1/4 cup mango puree
- 1/4 cup mango chunks
- 1 tsp vanilla extract
- 1 tsp LSA powder
- Fresh fruits of your choice
- 1 tin coconut yogurt (cream scooped out)
Preparation
In a bowl, combine chia seeds, soy milk, mango puree, vanilla extract, and LSA powder
Stir well and let the mixture sit for at least 15-30 minutes or refrigerate overnight to allow the chia seeds to form a pudding consistency
Once set, top with mango chunks, fresh fruits of your choice, and the cream from coconut yogurt
