Mango Chia Seed Breakfast

Ingredients

  • 3 tbsp chia seeds
  • 1 cup soy milk
  • 1/4 cup mango puree
  • 1/4 cup mango chunks
  • 1 tsp vanilla extract
  • 1 tsp LSA powder
  • Fresh fruits of your choice
  • 1 tin coconut yogurt (cream scooped out)

Preparation

  1. In a bowl, combine chia seeds, soy milk, mango puree, vanilla extract, and LSA powder

  2. Stir well and let the mixture sit for at least 15-30 minutes or refrigerate overnight to allow the chia seeds to form a pudding consistency

  3. Once set, top with mango chunks, fresh fruits of your choice, and the cream from coconut yogurt
