Vegan Chia Pudding Breakfast

Ingredients

  • 3 tbsp chia seeds
  • 1 cup soy milk or almond milk
  • 1 tsp maple syrup
  • 1 tsp vanilla extract
  • 2 tsp peanut butter
  • 2 tsp coconut yogurt
  • 1 tsp cashew cream
  • Homemade chia jam

Preparation

  1. Mix chia seeds, soy milk or almond milk, maple syrup, and vanilla extract in a bowl until well combined.

  2. Cover the mixture and refrigerate for at least 2 hours or overnight to allow it to thicken into pudding consistency.

  3. In a separate bowl, combine cashew cream and coconut yogurt, and whip until smooth and creamy.

  4. Layer the chia pudding with peanut butter and the whipped cashew cream mixture.

  5. Top with homemade chia jam before serving.
