Peanut Butter Chocolate Bites Almond Flour Cookies
Ingredients
- 2 cups almond flour
- 1/4 cup all-purpose flour (or cassava flour for gluten-free)
- 1/2 cup sugar (coconut sugar used)
- 1 tsp. baking powder
- 1/4 cup peanut butter
- 1/4 cup almond milk
- 1 egg

Preparation
Preheat the oven to 350°F (175°C) and line a baking sheet or spray it with cooking spray.
In a large bowl, whisk together the wet ingredients - peanut butter, almond milk, and egg. Then, stir in the dry ingredients - almond flour, all-purpose flour, sugar, and baking powder.
Use a big cookie scoop or ice-cream scoop to portion out the dough and form 7 cookies. Place them on the prepared baking sheet.
Top each cookie with @jojos Chocolate Bites.
Bake in the preheated oven for 14 minutes, until the cookies are golden brown and set.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
