Key Lime Pie Donuts

Ingredients

  • 2/3 cup almond flour
  • 3/4 cup all-purpose flour (gluten-free 1:1 baking flour can be used)
  • 1/2 tsp. baking powder
  • 1/2 cup granulated sugar (coconut sugar can be used)
  • Zest from one lime
  • 1/4 cup lime juice
  • 1/4 cup almond milk
  • 1 egg

Preparation

  1. Preheat the oven to 350°F (175°C) and spray a donut pan with cooking spray.

  2. Put all of the ingredients into a blender and blend until the mixture is creamy.

  3. Scoop the batter into the donut pan, filling each cavity. The recipe should make approximately 6 donuts.

  4. Bake the donuts in the preheated oven for 12 minutes or until a toothpick inserted into the donuts comes out clean.

  5. Once the donuts have cooled, top them with frosting. You can add green food coloring to the frosting if desired. Sprinkle with graham cracker crumbs and shredded coconut.
