Banana and Apple Cake
Ingredients
- 300g flour
- 175g brown sugar or brown sweetener
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 300g very ripe bananas (about 3)
- 100ml kefir
- 2 eggs
- 90g butter
- 2 apples
Preparation
Crush the bananas with a fork.
Mix the eggs with the kefir and the crushed bananas.
Pour in the melted butter, add the sugar, and mix everything well.
Add the flour, cinnamon, baking powder, and baking soda. Mix until homogeneous.
Cut the apples into cubes, toss them in 2 tablespoons of flour, and fold them in with a spatula.
Pour the batter into a loaf pan lined with parchment paper, and sprinkle a little sugar on top for a crust.
Bake in the oven at 170°C for about an hour, or until a toothpick inserted comes out clean.
After it has cooled completely, remove from the pan and slice.
Tips
Serve with peanut butter cream mixed with cocoa and banana slices, paired with coffee or tea.
For children under one year, omit sugar and sweeten with honey or maple syrup if desired, as the fruits provide natural sweetness.
This recipe helps reduce waste by using overripe bananas and forgotten apples.
