Banana Coconut Flour Waffles with Eggs and Bacon

Ingredients

  • 2 eggs
  • 2 small bananas
  • 1/4 cup coconut flour
  • 1 tablespoon applesauce (can substitute for coconut oil)
  • 1 teaspoon baking powder
  • Optional: 1 teaspoon cinnamon
  • Optional: 1 scoop vanilla collagen
  • 2 eggs (for frying)
  • Bacon
  • Ghee for frying

Preparation

  1. Whisk the eggs.

  2. Mash the bananas and add in the rest of the ingredients.

  3. Grease your waffle iron and add batter.

  4. Cook for 5 minutes.

  5. Fry 2 eggs in ghee until desired doneness.

  6. Cook the bacon until crispy.

  7. Serve the waffles with the fried eggs and bacon.
