Banana Coconut Flour Waffles with Eggs and Bacon
Ingredients
- 2 eggs
- 2 small bananas
- 1/4 cup coconut flour
- 1 tablespoon applesauce (can substitute for coconut oil)
- 1 teaspoon baking powder
- Optional: 1 teaspoon cinnamon
- Optional: 1 scoop vanilla collagen
- 2 eggs (for frying)
- Bacon
- Ghee for frying
Preparation
Whisk the eggs.
Mash the bananas and add in the rest of the ingredients.
Grease your waffle iron and add batter.
Cook for 5 minutes.
Fry 2 eggs in ghee until desired doneness.
Cook the bacon until crispy.
Serve the waffles with the fried eggs and bacon.
Tips
Freeze extra waffles for future breakfasts.
