Cheesy Scrambled Tofu and Spinach Sandwich
Ingredients
- 1 tsp oil (optional)
- 1/2 block extra firm tofu
- 2 cups baby spinach, chopped
- 1 tsp nutritional yeast
- 1 jalapeño, seeded and chopped
- 1 white onion, finely chopped
- 2 scallions, chopped (whites/greens separated)
- 2 cloves garlic, crushed
- 1.5 tsp black salt
- Pinch of turmeric
- 1/2 cup dairy free cheddar (optional)
- Salt and pepper, to taste
Preparation
Heat oil (if using) in a non-stick skillet over medium-high heat.
If not using oil, add the chopped onions, jalapeño, garlic to the skillet directly.
Season with salt (use sparingly), pepper, and cook, stirring constantly until soft, about 5 minutes.
Add scallion whites and spinach and cook for 4 minutes on medium-high.
Once the spinach leaves have wilted, stir in the chopped tofu.
Season with black salt (about 1.5 tsp), turmeric, nutritional yeast and cook for 10 minutes, stirring often.
Reduce heat, add cheddar (if using) and stir until it has melted.
Check for seasoning and top with scallion greens.
Make sandwiches with toasted bread, scrambled tofu, tomatoes and hot sauce.
Tips
Use any variety of bread that you have. Highly recommend sourdough slices.
Use any hot sauce that you have. Sriracha works really well.
