Ginger Peach Overnight Oats
Ingredients
- 1/2 cup rolled oats
- 1 tbsp ground flax seed
- 1 peach
- 1 medjool date or 2 tsp maple syrup
- Pinch of cinnamon
- 1/4 tsp ginger powder or a small amount of fresh grated ginger
- Pinch of salt
- 1/2 cup coconut milk
- 1 mashed banana or 2-3 tbsp apple sauce
Preparation
Combine oats, flax, seasonings and dates (either mash date with a fork or place in a food processor with the oats and pulse to combine) in a bowl or Tupperware container
Cut peach in half and dice one of the halves into small pieces
Add milk and gently fold together
Set in fridge overnight
Mash banana prior to serving and add mixture to oatmeal
Give it a good stir and top with left over peach slices and other fruit as desired
