Indonesian Shredded Chicken with Black Pepper

Ingredients

  • 500 grams chicken breast, fillet
  • 3 kaffir lime leaves, torn
  • 1 stalk lemongrass, bruised
  • 1/2 tablespoon black pepper powder
  • 1 tablespoon palm sugar
  • 2 green onions, sliced
  • 1 tomato, sliced
  • Salt to taste
  • Olive oil as needed

Spice paste

  • 3 red shallots
  • 3 large red chilies, seeds removed
  • 2 tomatoes

Preparation

  1. Boil the chicken until cooked, then bruise and shred it.

  2. Sauté the spice paste, lemongrass, and kaffir lime leaves until fragrant.

  3. Add palm sugar, black pepper, and salt, stir until well mixed.

  4. Add the shredded chicken, tomato, and green onions, stir until the spices are absorbed and taste to adjust seasoning.

Notes

  1. For a spicier version, combine different types of chilies.
