Indonesian Spicy Sweet Eggplant

Ingredients

  • 3 eggplants
  • 2 cloves garlic
  • 2 tablespoons butter
  • 3 tablespoons chili sauce
  • 2 tablespoons sweet soy sauce
  • 1/2 teaspoon seasoning
  • 1/2 teaspoon granulated sugar

Wet batter

  • 3 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon chicken stock powder
  • Water as needed

Preparation

  1. Cut the eggplants into bite-sized pieces

  2. In a bowl, mix the flour, cornstarch, chicken stock powder, and water to form a batter

  3. Dip the eggplant pieces in the batter to coat evenly

  4. Heat oil in a pan and fry the battered eggplant until golden brown and crispy

  5. In a separate pan, melt butter and sauté the garlic until fragrant

  6. Add the chili sauce, sweet soy sauce, seasoning, and sugar to the pan, stirring to combine into a sauce

  7. Add the fried eggplant to the sauce and toss gently to coat

  8. Serve the dish hot
