Indonesian Spicy Sweet Eggplant
Ingredients
- 3 eggplants
- 2 cloves garlic
- 2 tablespoons butter
- 3 tablespoons chili sauce
- 2 tablespoons sweet soy sauce
- 1/2 teaspoon seasoning
- 1/2 teaspoon granulated sugar
Wet batter
- 3 tablespoons all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon chicken stock powder
- Water as needed
Preparation
Cut the eggplants into bite-sized pieces
In a bowl, mix the flour, cornstarch, chicken stock powder, and water to form a batter
Dip the eggplant pieces in the batter to coat evenly
Heat oil in a pan and fry the battered eggplant until golden brown and crispy
In a separate pan, melt butter and sauté the garlic until fragrant
Add the chili sauce, sweet soy sauce, seasoning, and sugar to the pan, stirring to combine into a sauce
Add the fried eggplant to the sauce and toss gently to coat
Serve the dish hot
