Maple Pecan Pie Baked Oats

Ingredients

  • 1/2 cup oats
  • 1/2 cup almond milk
  • 1 tablespoon chia seeds
  • 1 scoop vanilla protein powder (optional)
  • 1 heaped tablespoon coconut yoghurt
  • 1/2 teaspoon baking powder

Toppings

  • pecans

Preparation

  1. Blend the oats into flour.

  2. In a bowl, mix the oat flour, almond milk, chia seeds, vanilla protein powder, coconut yoghurt, and baking powder well.

  3. Transfer the mixture to a baking dish and top with pecans.

  4. Bake at 180°C for 16 minutes.

  5. Remove from oven and drizzle with maple syrup before serving.

Notes

  1. Bake for less time than usual for a gooey texture instead of cakey.

  2. Pecans are rich in healthy fats, antioxidants, and vitamins, helping to improve cholesterol levels.
