Northern Brazilian Cassava Cheese Bread
Ingredients
- 3 eggs
- 1/4 cup oil
- 1 cup milk
- 1 heaping cup grated cheese
- 3 cups sweet cassava starch
- 1 tablespoon baking powder
- salt to taste
Preparation
Blend eggs, oil, milk, grated cheese, sweet cassava starch, and salt until smooth
Add baking powder and pulse just to combine
Pour the batter into a greased bundt pan
Bake in a hot oven for about 35 minutes, until golden and the sides pull away from the pan
Remove from the oven and let cool on the stove top, closing doors and windows to avoid drafts
Notes
This dish is known as 'mangulΓ£o' or 'cascorΓ£o' in Northern Brazil due to its delicious crust
