Soft and Fluffy Kuih Cakoi

Ingredients

  • 1 cup water
  • 2 cups bread flour
  • 1/4 teaspoon instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 tablespoon vegetable oil
  • Cooking oil

Preparation

  1. In a container, add sugar, salt, water, and oil then stir well. In another container, add flour with baking soda and instant yeast, stir dry until slightly mixed, make a well in the center, add the sugar, salt, oil, and water mixture, and mix until well combined.

  2. Transfer the dough to a floured surface, knead until dough forms, divide into two long pieces each 40 cm long, cover with plastic wrap, and let rest for 1 hour.

  3. After 1 hour, flatten the dough and cut into small pieces about 1 cm thick and 2 cm long, let rest for another 10-15 minutes, and heat oil in a wok.

  4. When the oil is hot, take two pieces, stack them together, press in the middle where they join, pull the ends with chopsticks to lengthen, and fry over medium heat until golden brown.

Tips

  1. Place the dough near the fridge for a higher temperature to allow it to rise well.
