Vegan Pumpkin Oats Breakfast Dish

Ingredients

  • 1/3 cup rolled oats
  • 2 tbsp pumpkin purée
  • 1/2 tsp pumpkin pie spice
  • 1-2 tsp brown sugar
  • Pinch of salt
  • 1 cup almond milk

Preparation

  1. Add all your ingredients to a saucepan and bring to a low simmer

  2. Allow to cook and thicken as desired, about 3-5 minutes

  3. Remove from heat and stir well again then serve topped with nut butter and other toppings

Banana topping

  1. Slice banana into coins and place on a non-stick pan with a little drizzle of maple syrup and a pinch of salt

  2. Allow bananas to cook and brown on both sides

  3. For extra caramel flavor, add a teaspoon of vegan butter and cook the bananas in it to brown the edges
