Vegan Pumpkin Oats Breakfast Dish
Ingredients
- 1/3 cup rolled oats
- 2 tbsp pumpkin purée
- 1/2 tsp pumpkin pie spice
- 1-2 tsp brown sugar
- Pinch of salt
- 1 cup almond milk
Preparation
Add all your ingredients to a saucepan and bring to a low simmer
Allow to cook and thicken as desired, about 3-5 minutes
Remove from heat and stir well again then serve topped with nut butter and other toppings
Banana topping
Slice banana into coins and place on a non-stick pan with a little drizzle of maple syrup and a pinch of salt
Allow bananas to cook and brown on both sides
For extra caramel flavor, add a teaspoon of vegan butter and cook the bananas in it to brown the edges
