Hot Honey Halloumi Schnitzel
Ingredients
- 2 blocks halloumi
- 1 large egg
- A large handful flour
- 100g cornflakes
- Oil for frying
- 130g honey
- 1 heaped teaspoon chilli flakes
- 1 teaspoon vinegar
Preparation
Cut each block of halloumi in half lengthways to make four quarters.
Beat the egg in a bowl.
Crush the cornflakes into fine crumbs.
Place the halloumi quarters in boiling water and leave to soak for 20 minutes.
Carefully lift one halloumi quarter from the pan and place it on a double sheet of kitchen roll.
Place more kitchen roll on top and gently roll it out until thin and doubled in size, then leave to cool completely.
Roll it in flour until coated, then tap off excess.
Dip it in the beaten egg, then coat with cornflake crumbs on all sides.
Repeat the process with the remaining halloumi quarters.
Fry each breaded halloumi in oil for a couple of minutes on each side until crisp and golden brown.
In a separate pan, combine honey, chilli flakes, and vinegar, and gently heat until bubbling.
Cut each fried halloumi schnitzel into strips and serve with chips and salad, topping with the hot honey.
Notes
Soaking halloumi in boiling water makes it pliable and easy to roll out for a thin, crispy texture.
This dish is perfect for a weekend dinner and pairs well with chips and salad for a complete meal.
