Fried Tomato Fritters

Ingredients

  • 3 ripe tomatoes
  • 1 red onion
  • 1/3 bunch parsley
  • 1 teaspoon dried thyme
  • 1.5 cups flour
  • 1 teaspoon salt

Preparation

  1. Chop the tomatoes into small cubes.

  2. Finely chop the red onion.

  3. Finely chop the parsley.

  4. Combine all ingredients in a deep bowl.

  5. Mix the mixture until it reaches a smooth but not too runny consistency.

  6. If necessary, add a little more flour.

  7. Heat oil in a large pan.

  8. Scoop the mixture with a spoon, pour into the pan, and shape into fritters.

  9. Fry until both sides are golden brown.

  10. Place the fried fritters on paper towels to drain excess oil.
