Fried Tomato Fritters
Ingredients
- 3 ripe tomatoes
- 1 red onion
- 1/3 bunch parsley
- 1 teaspoon dried thyme
- 1.5 cups flour
- 1 teaspoon salt
Preparation
Chop the tomatoes into small cubes.
Finely chop the red onion.
Finely chop the parsley.
Combine all ingredients in a deep bowl.
Mix the mixture until it reaches a smooth but not too runny consistency.
If necessary, add a little more flour.
Heat oil in a large pan.
Scoop the mixture with a spoon, pour into the pan, and shape into fritters.
Fry until both sides are golden brown.
Place the fried fritters on paper towels to drain excess oil.
