Moist Carrot Cake with Frosting
Ingredients
- 1 cup vegetable oil
- 3/4 cup sugar
- 1 teaspoon cinnamon
- 4 eggs
- 3 large carrots (375 grams)
- 1 cup flour
- 2 teaspoons baking powder
- 250 grams ground almonds or hazelnuts
Frosting
- 300 grams cream cheese
- 3/4 cup powdered sugar
- 1 packet vanilla
Preparation
Grate the carrots.
In a large bowl, mix the vegetable oil, sugar, eggs, and cinnamon until well combined.
In another bowl, sift together the flour and baking powder.
Add the dry ingredients to the wet mixture and stir until just combined.
Fold in the grated carrots and ground almonds or hazelnuts.
Pour the batter into a greased cake pan.
Bake in a preheated oven at 180°C for about 40 minutes or until a toothpick inserted comes out clean.
Allow the cake to cool completely.
For the frosting, mix the cream cheese, powdered sugar, and vanilla until smooth.
Spread the frosting over the cooled cake.
