Raspberry and Vanilla Bircher Bowl

Ingredients

  • 1/2 cup oats
  • 1 tbsp chia seeds
  • 1/2 cup frozen raspberries
  • 1 tsp vanilla extract
  • 1 cup plant-based milk
  • 1 dessert spoon coconut yoghurt
  • more berries
  • 1 tbsp almond butter
  • cacao nibs

Preparation

  1. Put 1/2 cup oats, 1 tbsp chia seeds, 1/2 cup frozen raspberries, and 1 tsp vanilla extract into a bowl.

  2. Add 1 cup plant-based milk and stir.

  3. Cover and refrigerate overnight.

  4. In the morning, stir in 1 dessert spoon coconut yoghurt, add more berries, 1 tbsp almond butter, and cacao nibs.

  5. Enjoy with a cup of fresh mint tea.
