Spicy Fried Chicken with Jengkol
Ingredients
- 1 whole chicken (can use free-range chicken)
- 250 g young jengkol
- 4 lime leaves
- 2 bay leaves
- 1 lemongrass stalk
Chicken spice paste
- 8 cloves garlic
- 4 shallots
- 1 tablespoon coriander
- 1 tablespoon ground galangal
- 1/2 tablespoon ground ginger
- 1/4 teaspoon ground pepper
- a pinch of ground turmeric
- salt
Balado spices
- 150 g curly red chilies
- 8 shallots
- 1 tomato
Preparation
Stew the chicken with the spice paste and sufficient water, add the leaves, and cook until chicken is done.
Fry the young jengkol, drain it, then coat with a little salt until even, stirring with a spoon because jengkol is still hot.
Fry the chicken and set it aside, sauté the balado spices until fragrant and cooked, season with salt, then add the young jengkol, stir until well mixed, and combine with the fried chicken.
