Sunrise Carrot and Banana Bread Breakfast Cake

Ingredients

  • 150g carrot, mashed or grated
  • 150g over ripe banana, mashed
  • 200g self raising flour (I use gluten free)
  • 50g oats
  • 1 handful sultanas
  • 1 handful walnuts, chopped
  • 5 tbsp sweetener
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 3 eggs (or my vegan buttermilk recipe)

Preparation

  1. Preheat oven to 180C/350F/gas mark 4.

  2. Sift the flour, baking powder and cinnamon into a large bowl and stir until combined.

  3. Mash the cooked carrots (or use raw grated) and banana and add to the mix.

  4. Add all of the other ingredients to the bowl.

  5. Pour into two 8inch cake tins and bake in the oven for 15-20 minutes or until a skewer comes out clean. Or for 30 minutes in one deep 6inch cake tin.

  6. Sandwich or serve with thick vanilla or coconut yogurt.
