Turkish Pastry Shop Açma
Ingredients
- 500 grams flour
- 300 ml water
- 12 grams salt
- 20 grams sugar
- 75 ml vegetable oil
- 10 grams dry yeast or 20 grams fresh yeast
For spreading
- 50 grams room temperature butter
For topping
- 1 egg yolk
- Sesame seeds or poppy seeds (optional)
Preparation
Make a well in the flour, add yeast and sugar, pour in lukewarm water and oil, let the yeast activate for 2 minutes, then add salt around the flour and knead until smooth for about 5 minutes.
Cover the dough airtight and let it rise for about 15 minutes.
Divide the risen dough into 10 pieces, add about 5 grams of oil to each piece, cover with plastic wrap and let rise for another 10 minutes.
Roll out each piece as large as possible by hand, fold the edges and let them rest for another 10 minutes to make shaping easier.
Shape into twisted bread form, brush with egg yolk and sprinkle with seeds, proof in a 40°C oven for 10 minutes, then bake at 190°C until golden brown.
