Fresh Homemade Energy Bars with Oats and Seeds
Ingredients
- 180g rolled oats
- 30g rice krispies
- 80g sunflower seeds
- 80g pumpkin seeds
- 8 large fresh dates, pitted and chopped
- 80g dried apricots, chopped into small pieces
- 120g honey
- 100g peanut butter
- 2 tsp ground cinnamon
Preparation
Preheat oven to 180C and line a baking tray with non stick paper. Line another baking tin with baking paper leaving an overhang on the sides.
Sprinkle the oats, rice krispies, sunflower and pumpkin seeds on the first tray and bake for 20 mins until a bit golden. Remove and allow to cool.
Place the dates and apricots in a blender and blitz until well combined then add the baked oat mixture and blitz a few times.
Add the honey, peanut butter and cinnamon to a pan. Heat and stir until smooth and runny. Add to the oat mixture and stir well to combine.
Press the mixture into the prepped tin then freeze for an hour or so until firm.
Slice into bars and store in an airtight container in the fridge for up to a week.
