Blackcurrant French Toast for Sunday Brunch

Ingredients

  • 2 slices gluten free bread
  • 200ml almond milk
  • 2 tbsp maple syrup
  • coconut oil for frying
  • hot blackcurrant jam (homemade with frozen blackcurrants, chia seeds, and coconut sugar)
  • sunflower spread or dairy free butter
  • sprinkling of rock salt

Preparation

  1. Soak two slices of gluten free bread in 200ml of almond milk mixed with 2 tbsp maple syrup.

  2. Lightly fry each slice in a bit of coconut oil until crisp and golden.

  3. Layer with hot blackcurrant jam and sunflower spread mixed with a sprinkling of rock salt.

  4. Tuck in.
