Crispy Brazilian Street Pastry
Ingredients
- 3 cups all-purpose flour
- 1 cup warm water (or a little more)
- 3 tablespoons oil
- 1 tablespoon liquor
- 1 level tablespoon salt
- All-purpose flour for dusting
Preparation
Place the flour mixed with salt in a bowl or on a work surface and make a well in the center
In the well, add the oil, liquor, and a little water
Gradually mix the water and flour, incorporating more flour from the edges of the well
Add more water if the dough becomes too stiff; the dough should be soft
If the dough is a little sticky, it's okay; if too sticky, add more flour; if too stiff, add more water
On a floured surface, roll the dough very thin (if not thin, it won't be crispy after frying)
Fill with your favorite filling and seal with a fork
Fry in hot oil (not too hot) over medium-high heat, then drain using a skimmer and let dry on paper towels

Yields 15 large pastΓ©is (fair size)
