Crispy Brazilian Street Pastry

Ingredients

  • 3 cups all-purpose flour
  • 1 cup warm water (or a little more)
  • 3 tablespoons oil
  • 1 tablespoon liquor
  • 1 level tablespoon salt
  • All-purpose flour for dusting

Preparation

  1. Place the flour mixed with salt in a bowl or on a work surface and make a well in the center

  2. In the well, add the oil, liquor, and a little water

  3. Gradually mix the water and flour, incorporating more flour from the edges of the well

  4. Add more water if the dough becomes too stiff; the dough should be soft

  5. If the dough is a little sticky, it's okay; if too sticky, add more flour; if too stiff, add more water

  6. On a floured surface, roll the dough very thin (if not thin, it won't be crispy after frying)

  7. Fill with your favorite filling and seal with a fork

  8. Fry in hot oil (not too hot) over medium-high heat, then drain using a skimmer and let dry on paper towels

  2. Filling suggestions: cheese, ground meat, chicken with catupiry, dried beef with cheese and palm heart
