Easy French Toast Muffins
Ingredients
- 7 slices of bread (about 1/2 loaf)
- 5 eggs
- 1/2 cup milk
- 2 tsp cinnamon
- 2 tsp vanilla extract or 2 tbsp vanilla protein
- Sprinkle of salt
Topping
- 1/4 cup coconut sugar
- 2 tsp cinnamon
- 1/2 tbsp melted coconut oil
Preparation
Whisk together the eggs then add in the milk, cinnamon, vanilla, and sprinkle of salt.
Mix well.
Cut the bread into cubes.
Add to a bowl and pour the mixture on top. Use a spatula and make sure all the bread is coated.
Pour mixture into a muffin tin lined with cupcake liners. Fill to the top.
In a small bowl, mix together the topping ingredients.
Sprinkle the topping over the muffins.
Bake at 350F for 25 minutes.
Remove, let cool, and enjoy.

This recipe makes 8 muffins and is ideal for meal prep.
