Easy French Toast Muffins

Ingredients

  • 7 slices of bread (about 1/2 loaf)
  • 5 eggs
  • 1/2 cup milk
  • 2 tsp cinnamon
  • 2 tsp vanilla extract or 2 tbsp vanilla protein
  • Sprinkle of salt

Topping

  • 1/4 cup coconut sugar
  • 2 tsp cinnamon
  • 1/2 tbsp melted coconut oil

Preparation

  1. Whisk together the eggs then add in the milk, cinnamon, vanilla, and sprinkle of salt.

  2. Mix well.

  3. Cut the bread into cubes.

  4. Add to a bowl and pour the mixture on top. Use a spatula and make sure all the bread is coated.

  5. Pour mixture into a muffin tin lined with cupcake liners. Fill to the top.

  6. In a small bowl, mix together the topping ingredients.

  7. Sprinkle the topping over the muffins.

  8. Bake at 350F for 25 minutes.

  9. Remove, let cool, and enjoy.

Notes

  1. This recipe makes 8 muffins and is ideal for meal prep.
