Fluffy Turkish Pastry Rolls

Ingredients

  • 2 eggs (yolks for topping)
  • 1 packet dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup lukewarm milk
  • 1 cup lukewarm water
  • 5.5 cups flour

Preparation

  1. Combine lukewarm milk, water, sugar, and yeast in a mixing bowl, stir well, and let rest for a few minutes.

  2. Add vegetable oil, egg white, and salt, then mix again.

  3. Gradually add flour while kneading to form a soft dough that is slightly sticky.

  4. Cover the dough and let it rise; for faster rising, heat the oven to 50°C, turn it off, and place the dough inside for about 30 minutes.

  5. Divide the risen dough into desired sizes, shape into balls, and place on a baking sheet, then let rise again for 15-20 minutes.

  6. Brush the tops with the egg yolk mixture, optionally mixed with 2-3 teaspoons of oil for a shinier finish.

  7. Preheat the oven to 200°C without fan and bake for 15 minutes, then reduce to 180°C and bake until golden brown.

  8. Allow to cool for 10 minutes before serving.

Tips

  1. Add flour gradually as the amount may vary by brand.

  2. Ensure the dough is soft and not too firm for a puffier result.

  3. Do not leave the oven on during rising to avoid overproofing.
