Peanut Butter Ganache Cups with Chocolate and Peanut Butter Cookie Base

Ingredients

For the Cups

  • 2/3 cup Peanut Butter (@mayversfood)
  • 1/3 cup Coconut Sugar
  • 1/4 cup Protein Powder (@macr0mike)
  • 1/4 cup Almond Milk
  • 1/2 cup Rolled Oats

For the Ganache

  • 75g Dark Chocolate (@sweet_william_chocolate)
  • 1/4 cup Coconut Cream

Preparation

  1. Preheat oven to 180°C.

  2. Add ingredients for the cookie cups to a food processor and blend until combined. (I used my @magimix_australia Cook Expert).

  3. Once a dough is formed, press it into a silicone muffin tray and shape into cups.

  4. Bake for 12-15 minutes, then refrigerate to cool.

  5. Make chocolate ganache by melting together chocolate and coconut cream. (I used my @magimix_australia Cook Expert on Expert program for 5 minutes on speed 3 at 80°C).

  6. Pour ganache into cooled cookie cups and return to the fridge to set.

  7. Keep stored in the fridge for up to 5 days.
