Pumpkin Spice Granola
Ingredients
- 2 cups oats
- 1 cup shredded coconut
- 1/2 cup millet (uncooked or another grain like buckwheat groats)
- 1/2 cup pumpkin seeds
- 3 tsp pumpkin pie spice
- 1/2 tsp salt
- 1/4 cup pumpkin puree
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 2 Tbsp coconut sugar
Preparation
Mix the dry ingredients
Mix the wet ingredients in a different bowl until well combined
Then mix everything together
Spread onto a large parchment paper lined baking sheet
Bake at 300F for 40 minutes or until golden brown. Mix the granola after 15 minutes or once in a while. Let it cool and you can add dry fruits like raisins or cranberries. Store in an airtight container. Enjoy it with your smoothie bowls or with vegan yogurt and fruits
