Pumpkin Spice Granola

Ingredients

  • 2 cups oats
  • 1 cup shredded coconut
  • 1/2 cup millet (uncooked or another grain like buckwheat groats)
  • 1/2 cup pumpkin seeds
  • 3 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/4 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 2 Tbsp coconut sugar

Preparation

  1. Mix the dry ingredients

  2. Mix the wet ingredients in a different bowl until well combined

  3. Then mix everything together

  4. Spread onto a large parchment paper lined baking sheet

  5. Bake at 300F for 40 minutes or until golden brown. Mix the granola after 15 minutes or once in a while. Let it cool and you can add dry fruits like raisins or cranberries. Store in an airtight container. Enjoy it with your smoothie bowls or with vegan yogurt and fruits
