Banana and Chia Seed Porridge with Plant Milk

Ingredients

  • oats
  • 1 mashed banana
  • 1 tablespoon chia seeds
  • water or plant-based milk

Toppings

  • 1-2 tablespoons maple syrup
  • sliced banana
  • blueberries
  • granola
  • maple fruit
  • chia jam
  • toasted almonds
  • additional chia seeds

Preparation

  1. In a pan, add oats, 1 mashed banana, and 1 tablespoon chia seeds, then cover with water or plant-based milk; soak overnight or cook gently.

  2. Add more liquid until the desired texture is reached.

  3. While the porridge is cooking, in a small frying pan, add 1-2 tablespoons of maple syrup and heat it.

  4. Add sliced banana to the syrup, turning occasionally until golden.

  5. Add blueberries and cook for a couple of minutes.

  6. Remove the topping mixture from heat.

  7. Spoon the porridge into a bowl and add toppings such as granola, maple fruit, chia jam, toasted almonds, and additional chia seeds.
