Speedy Coconut Yoghurt and Peanut Butter Porridge

Ingredients

  • oats
  • 2 heaped spoonfuls of coconut yoghurt
  • 1 teaspoon peanut butter
  • coconut milk

Toppings

  • 1/2 banana
  • 1/2 pear
  • blueberries
  • chia jam
  • a smidge more peanut butter
  • cacao nibs

Preparation

  1. Place oats, 2 heaped spoonfuls of coconut yoghurt, and 1 teaspoon of peanut butter in a pan.

  2. Cover with coconut milk and stir constantly while cooking for about 5 minutes.

  3. Spoon the mixture into a bowl.

  4. Top with half a banana, half a pear, blueberries, chia jam, a bit more peanut butter, and cacao nibs.

  5. Eat immediately to enjoy.

Tips

  1. This porridge is ideal for a quick breakfast on busy days.

  2. Pair with hot peppermint tea if you like, but be careful as it can be very hot.
