Speedy Coconut Yoghurt and Peanut Butter Porridge
Ingredients
- oats
- 2 heaped spoonfuls of coconut yoghurt
- 1 teaspoon peanut butter
- coconut milk
Toppings
- 1/2 banana
- 1/2 pear
- blueberries
- chia jam
- a smidge more peanut butter
- cacao nibs
Preparation
Place oats, 2 heaped spoonfuls of coconut yoghurt, and 1 teaspoon of peanut butter in a pan.
Cover with coconut milk and stir constantly while cooking for about 5 minutes.
Spoon the mixture into a bowl.
Top with half a banana, half a pear, blueberries, chia jam, a bit more peanut butter, and cacao nibs.
Eat immediately to enjoy.
Tips
This porridge is ideal for a quick breakfast on busy days.
Pair with hot peppermint tea if you like, but be careful as it can be very hot.
