Coconut Porridge with Mango and Chia Seeds

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 1/4 cups almond milk
  • 1 cup canned coconut milk (light or full-fat)
  • 1/2 mashed ripe banana
  • 1 tablespoon chia seeds
  • 1 1/2 teaspoons vanilla extract (optional)
  • Dash of salt

Toppings

  • 1 cup mango, chopped
  • 1/4 cup coconut flakes, toasted

Preparation

  1. In a saucepan, firstly add your oats and milk and stir well.

  2. After 2 minutes, add in your mashed banana and stir regularly.

  3. After another 5 minutes add in your chia seeds, vanilla extract, and salt, and cook for another 2-3 minutes.

  4. Finally, top your gorgeous bowl with your mango and coconut flakes, and any other toppings you desire
