Coconut Porridge with Mango and Chia Seeds
Ingredients
- 1 cup old-fashioned rolled oats
- 1 1/4 cups almond milk
- 1 cup canned coconut milk (light or full-fat)
- 1/2 mashed ripe banana
- 1 tablespoon chia seeds
- 1 1/2 teaspoons vanilla extract (optional)
- Dash of salt
Toppings
- 1 cup mango, chopped
- 1/4 cup coconut flakes, toasted
Preparation
In a saucepan, firstly add your oats and milk and stir well.
After 2 minutes, add in your mashed banana and stir regularly.
After another 5 minutes add in your chia seeds, vanilla extract, and salt, and cook for another 2-3 minutes.
Finally, top your gorgeous bowl with your mango and coconut flakes, and any other toppings you desire
