Hearty Gingerbread Cauliflower Oatmeal

Ingredients

  • 1/2 cup soaked gluten-free oats
  • 1/2 cup frozen cauliflower rice
  • 1 egg white
  • Gingerbread syrup
  • Cinnamon, nutmeg, ginger
  • Almond milk

Toppings

  • Cinnamon stewed apple
  • Fig
  • Sesame and honey butter

Preparation

  1. Combine oats, cauliflower rice, egg white, gingerbread syrup, spices, and almond milk in a microwave-safe bowl

  2. Microwave on high for 2-3 minutes or until thickened and cooked

  3. Prepare toppings by stewing apples with cinnamon until soft, and ready other toppings

  4. Top the cooked oat mixture with stewed apples, fig, and sesame honey butter
