Lemon Garlic Shrimp with Zoodles and Avocado Pesto

Ingredients

  • 1 pound shrimp
  • 1 tablespoon melted ghee
  • 1/4 teaspoon pepper
  • 1/4 teaspoon sea salt
  • 1 teaspoon garlic
  • Juice of 1/2 lemon
  • Zucchini
  • Avocado pesto

Preparation

  1. Heat a skillet over medium-low heat.

  2. In a bowl, mix together 1 pound shrimp, 1 tablespoon melted ghee, 1/4 teaspoon pepper, 1/4 teaspoon sea salt, 1 teaspoon garlic, and juice from 1/2 lemon. Let it marinate for 10 minutes.

  3. Spiralize the zucchini into zoodles while waiting.

  4. Cook the shrimp in the skillet for 8-10 minutes.

  5. Remove the shrimp from the pan and set aside.

  6. Add the zoodles to the pan and cook for 2-3 minutes.

  7. Top with avocado pesto and serve.
