Lemon Garlic Shrimp with Zoodles and Avocado Pesto
Ingredients
- 1 pound shrimp
- 1 tablespoon melted ghee
- 1/4 teaspoon pepper
- 1/4 teaspoon sea salt
- 1 teaspoon garlic
- Juice of 1/2 lemon
- Zucchini
- Avocado pesto
Preparation
Heat a skillet over medium-low heat.
In a bowl, mix together 1 pound shrimp, 1 tablespoon melted ghee, 1/4 teaspoon pepper, 1/4 teaspoon sea salt, 1 teaspoon garlic, and juice from 1/2 lemon. Let it marinate for 10 minutes.
Spiralize the zucchini into zoodles while waiting.
Cook the shrimp in the skillet for 8-10 minutes.
Remove the shrimp from the pan and set aside.
Add the zoodles to the pan and cook for 2-3 minutes.
Top with avocado pesto and serve.
